Valentines Cookies
Ingredients:

1 Flax Egg

2 Cups of Plain Flour

70g of Vegan Butter
-
1 tsp of Baking Powder
-
200ml of Greek Yogurt or Sour Cream

2 tbsp of Brown Sugar
-
2 tbsp of White Sugar
-
1 tsp of Vanilla Extract

To Decorate: Demerara sugar and Cinnamon
Method:

In a large bowl, mix in the sofened butter (room-temperature) with the sugar and flax egg.

Add in the yogurt to the bowl.

To the wet mixture add sieved flour and baking powder.

Mix all of this together until it becomes a elastic and non sticking dough.

Take the dough and roll it out. Make sure it is not too thick and not to thin after rolling it out.

Take the cutter (I used a heart for Valentines Day, but you can use any other shape) and cut out the shapes from the dough.

Once there is no room to cut out the dough, roll the dough into a bowl and roll it out again, then cut out more shapes, Repeat this until there is no dough left.

Lay out all of the cookies onto baking paper on a baking tray. Make sure the cookies are spread out so that they don't stick together when they expand.

Sprinkle the cookies with cinnamon and brown sugar. Preheat the oven.

Bake the cookies for 7-10 minutes in the oven.

Make sure that the cookies are fully cool before handling.
