Plum and Cinnamon Streusel Cake
Ingredients:

10 Plums

1 and 1/3 Cup of All-Purpose Flour

1/2 Cup of Sugar

1 and 1/2 tsp of Baking Powder

1/2 tsp of Baking Soda
-
1 tbsp of Coconut Oil
-
1/2 tsp of Vinegar
-
1 tsp of Vanilla Extract
-
3/4 Cup of Lukewarm Water
-
For Topping: 1/2 Stick or 4 tbsp of Cold Vegan Butter

2/3 Cup of Flour
-
1/4 Cup of Granulated Sugar

1/2 tsp of Cinnamon
Method:

Preheat the oven.

Cut up the plums and cut them into 4-6 slices.

Combine all of the dry ingredients for the batter.

Mix in all of the wet ingredients into the batter mixture and mix well.

In a seperate bowl, mix together all of the ingredients for the topping (streusel) until it is quite
crumbly.

Put the streusel mixture into the freezer for 10-15 minutes or in the fridge for a couple of hours.

Oil the baking pan lightly and lay out a baking sheet into it.

Pour in the first mixture you made onto the bottom and spread out evenly.

Lay out the sliced plums onto the mixture in a fish scale pattern and lightly press them in.

Take out the dough from the fridge and crumble it on top of the plums so that it covers all of them.

Place into the oven for 30-35 minutes until it is golden brown.

Make sure that it is fully cooled before cutting it.
