Oven-Baked Pancakes With Plum Compote
Ingredients:

1 Cup of Yogurt

Egg Substitute
-
1 Cup of Flour
-
1-2 tbsp of Vegetable Oil
-
1 tbsp of Sugar
-
Optional: Vanilla or Cinnamon

1/4 tsp of Salt
-
1/2 tsp of Soda
-
1 tsp of Baking Soda
-
Optional: Diced Apples, Cranberries

Compote: Sugar, Plums, Boiling Water
Method:

Dice the apples and set them aside for now.

First, melt the butter.

Combine egg substitute, sugar, vanilla, yogurt and butter in one bowl.

Add the sifted flour, salt, baking soda and baking powder in another and mix together.

Add the apples and cranberries to the mixture and mix in so that they are spread equally throughout
the dough.

Pour the contents of the first bowl into the second and stir from bottom to top with the minimum
number of strokes.

Leave it on for 15-20 minutes.

Lay out the batter into muffin tins.

Put them into the preheated oven for 30 minutes.

For the compote: First cut all of the fruit that youo want to use to meduim sized pieces.

Put the fruit into a pot on the stove.

Add 2-3 tbsp of sugar depending on the sweetness of the fruit.

Add 2-3 tbsp of water to the pot.

Let the fruit simmer for 7-9 minutes until soft.

Let cool and serve. it can be kept refrigerated for one week.
