Austrian Dumplings
Ingredients:

1 and 1/2 tbsp Flaxseed

70g of Butter or Margarine (room temperature)

1 tbsp of Vanilla Extract

2 tbsp of Sugar

75g of All-Purpose Flour (extra for unsticking hands)

20g of Semolina
-
250g of Quark
-
A Pinch of Salt (for boiling water)

Filling Options: Apricots, Nougat, Chocolate, Chocolate Lindt Balls, Cherries

Coating: 7 tbsp of Breadcrumbs, 1 tbsp of Brown Sugar, Cinnamon
Method:

Add the flax egg and 75g of room temperature butter to the mixing bowl of your stand mixer. Mix at
medium speed until fluffy. Then add the all-purpose flour, quark, semolina, and about 1/2 tablespoon
of vanilla extract. Mix until just combined.

Then heat up water in a large pot and bring it to a boil. Add a pinch of salt.

Heat up a knob of butter in a pan and add the breadcrumbs, sugar and cinnamon. Toast until just
golden, then set aside.

Gather your ingredients. This is a really fun recipe because you can mix and match. If you’re a
chocolate lover use chocolate balls or nougat and if you like fruit desserts pick stone fruit like
apricots or plums.

Take a handful of dough, add a bit of flour and roll into a ball. Flatten the dough, add the filling
then roll into a dumpling.

Carefully drop the dumpling into the pot of simmering water and let it bubble away for 15-20 minutes
until it floats to the top.

After that take it out of the water and roll it in the toasted breadcrumbs, sugar and cinnamon.
