Peach Cobbler

Method:


  1. In a large bowl, combine the peaches, granulated sugar, light brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Coat evenly, and pour into a baking dish. Bake in preheated oven for 10 minutes.
  2. Meanwhile, prepare cobbler topping: in a large bowl, combine flour, sugar, baking powder, and salt.
  3. Blend in butter with your fingertips, or a pastry blender, until mixture resembles coarse meal. Stir in water until just combined.
  4. Remove peaches from the oven, and drop spoonfuls of topping over them.
  5. Sprinkle entire cobbler with the sugar. Bake until topping is golden, about 30 minutes.
